Most blogs/websites will gain traffic from Monday to Friday and then there is a decline as the weekend approaches. The reason been that most people are busy working on those days hence the need for more information.
Blogging on those days would be more productive since there are more people who are likely to pay attention to whatever you post. Google Analytic Data shows that when there are many people on the site, it pays when you pay attention to their needs and act accordingly to what they want.

Otherwise, blogging everyday and repeating the same old story or copying and pasting the work of other bloggers won't be of significant.

Know What is Trending (Buzz)
Get yourself informed about the latest news and what is trending at a particular time. Watch news, check forums and any other media where you can get the latest news. If there is hot news/buzz that is going around, try to look for topics related to the news but touches your niche and blog your point of view as the buzz spread.
Focus on your Audience
The most important thing to remember is to make sure that you put your audience in mind when writing any post. Create contents that appeal to your audience and be less concerned on which day it written/published. If your audience enjoy coming to your blog more on weekends, then you have an obligation to make sure that they find whatever bring them to your blog.
Lastly, most bloggers recommend Mondays as the best day to write and publish a blog but I believe that understanding and learning what your audience want is the best thing you can do. Read their comments and find out what they want or suggesting. Always remember to focus more on quality rather than quantity. Your blog should be meant to serve rather to sell.
